Those Vegetables by Patrick McVee

Have you ever noticed the piles of vegetables on display in the Cafeteria? If you have, then maybe you’ve wondered if you were allowed to take and eat them.

According to Suzy, employee of Bon Appétit, the vegetables are just put out for decoration. They will be used, she says, in cooking; she changes them frequently and takes them back into the kitchen. The eggplants on top of the “World-food” for example, are going to be grilled and placed into the sandwich bar as a vegetarian addition to sandwiches.

Suzy doesn’t recommend taking the vegetables on display, but she makes a partial exception for the bell peppers on top of the salad bar: “if you can eat that whole bell pepper, then I say ‘Eat that sucker!’”
